Ingredients

  • 200 g rice or soba noodles Cook according to package instructions until al dente
  • 3 tbsp natural peanut butter Smooth, creamy preferred
  • 2 tbsp soy sauce For salty umami flavor
  • 1 tbsp lime juice Freshly squeezed for brightness
  • 1 tbsp maple syrup Adds subtle sweetness
  • 1 tsp toasted sesame oil Adds toasted, nutty aroma
  • 1 tsp rice vinegar Optional, enhances tanginess
  • to taste toasted sesame seeds For garnish

Equipment

  • Large pot
  • Small bowl
  • Whisk
  • Tongs or chopsticks
  • serving bowl

Method

  1. Bring a large pot of salted water to a rolling boil and cook the noodles until just al dente, about 8-10 minutes. Drain and rinse with cold water to stop the cooking, then set aside.
  2. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sesame oil, and rice vinegar until smooth and glossy. This creates your rich, flavorful sauce.
  3. If desired, warm a splash of sesame oil in a skillet over medium heat and sauté minced garlic or ginger for about 30 seconds until fragrant, adding depth to the sauce. Let it cool briefly.
  4. Pour the sauce over the drained noodles in a large mixing bowl. Use tongs or chopsticks to gently toss, ensuring each strand is coated with the sauce and glistening.
  5. Transfer the coated noodles to a serving bowl. Sprinkle generously with toasted sesame seeds and fresh herbs like scallions or cilantro for added flavor and color.
  6. Let the noodles sit for a couple of minutes to absorb the flavors. Serve warm or at room temperature, enjoying the creamy, nutty, and tangy flavors in every bite.

Notes

For an extra layer of flavor, toast the sesame seeds before sprinkling. Feel free to add shredded carrots or cucumber slices for crunch. Leftovers can be stored in the fridge for up to 2 days; reheat gently or serve cold.
